Hainan Chicken Rice

My hand-made Hainan chicken rice (ข้าวมันไก่, 海南雞飯). It was quite easy to make.


  • Chicken
  • Rice
  • Garlic
  • Ginger
  • Cucumber


  1. Cut the fat out of chicken, keep it.
  2. Wash the rice. You may need to keep it in the water to make it soft.
  3. Boil water with 5-6 slices of ginger.
  4. Put the chicken into boiling water.
  5. Let the water boil again, then reduce the heat. Cook until the chicken is done, make sure the chicken is under the water all the time.
  6. Take the chicken out of water, cover it so that it won’t dry. Keep the stock.
  7. Take bubbles out of the stock, if any.
  8. Heat a saucepan.
  9. Put chicken’s fat into the saucepan. Fry until there is no more oil coming out. Keep only the oil.
  10. Dry the rice, if you haven’t already done that. Fry with the chicken’s oil for a few minute.
  11. Cook the rice normally with the stock. Also put a few cloves of garlic into the saucepan.
  12. Wait until the rice is done. Serve with slices of cucumber.
  13. Enjoy it with Singaporean chili sauce or thick soy sauce.
